This week our simple vegan recipe is… drum roll please… coconut cookies. These tempting morsels are super easy to make and are absolutely delicious. So what are you waiting for, grab your pinny and get baking!
Ingredients for coconut cookies simple vegan recipe
200g shredded coconut
30g rolled oats
2 ripe bananas
Method for coconut cookies simple vegan recipe
Preheat your oven to 180c and line a baking tray with grease proof paper
Blitz the coconut and oats in a food processor until they have a fine, breadcrumb texture.
Peel and slice the bananas, them mush to a smooth paste.
Using two tablespoons, dollops the mixture on the tray to create small rounds.
Bake for around 20 minutes, keeping a close eye on them from after 15 mins.
Leave to cool and then enjoy!
An extra touch
These coconutty delights taste incredible as they are. However, if you fancy jazzing them up even more, why not melt down some vegan chocolate to drizzle over or dip the cookies into? The bitterness of the dark chocolate really sets off that oh-so-sweet coconut goodness. You’ll most definitely be coming back for more!
