Today is World Vegan Day, to celebrate we thought we’d share a delicious vegan recipe – banana bread. This scrumptious teatime treat is the perfect antidote to use up all those brown bananas no one wants to eat! What’s more, our vegan friendly recipe is utterly delicious. We enjoy it smothered in nut butter with a good cup of tea.
Ingredients for banana bread vegan recipe
1 x loaf tin
50g coconut oil or sunflower oil, plus a little extra for the tin
200g self-raising flour
25g ground almonds
1 tsp baking powder
75g muscovado sugar
6 chopped dates
3-4 mashed up super ripe bananas
3 tbsp plant based milk
75g walnuts
Method for banana bread vegan recipe
Heat oven to 200C/180C fan/gas mark 6, whilst it’s warming up, line your loaf tin with baking parchment.
Mix the flour, ground almonds, baking powder, sugar and dates together.
Then, in a separate bowl, beat together the mashed banana and oil.
Once this is done, combine with the flour mix.
Add the almond milk, fold in the walnuts, then dollop the mixture into the tin.
Bake for 1 hr, covering the top if it starts to look too brown.
To check it’s done Insert a skewer, which should come out clean.
Allow to cool before removing from the tin.
