This week we are sharing an easy vegan recipe – deeply decadent vegan chocolate truffles. These luscious vegan truffles are an ideal after-dinner treat and perfect enjoyed with a hot cup of coffee. What’s more, they are exceptionally easy to make. So roll up your sleeves, rake out your spatula and try not to lick the bowl!
Ingredients for chocolate truffles easy vegan recipe
125 g vegan dark chocolate
95 g coconut milk (tinned)
1 tsp vanilla extract
2 tsp maple syrup
Pinch of Sea Salt
Orange oil or peppermint oil
Or for a boozy coffee truffle try 1/4 tsp coffee powder and 1 tsp whisky Cocoa Powder, for coating
Method for chocolate truffles easy vegan recipe
Break the chocolate into small chunks and place in a bowl.
In a small saucepan, heat the coconut milk on low heat until it simmers – be sure not to let it boil.
Take off the heat and pour hot coconut milk over chocolate and let sit for a minute or two.
Once rested, stir until the chocolate has fully melted and you have a smooth ganache consistency.
Add vanilla, maple syrup, Sea Salt and flavourings (if you are using them) and stir well.
Chill the bowl of ganache in the fridge for 2-3 hours or until it is thick, firm and can be scooped (be sure to check and stir every 1/2 hour so it chills evenly.)
Once set, use a teaspoon to scoop the ganache, then roll it into balls (make sure your hands are clean and cool.)
Dust with cocoa Powder.
Note: the truffles need to be kept in the in fridge.
